As commercial fishermen, ourselves, we take pride in providing products from wild and sustainably harvested salmon.

Fresh wild salmon is a seasonal delicacy, but because our fish is frozen immediately after it’s caught we are able to enjoy it all year long.

Ingredients

We like to keep it simple and all natural, our ingredients contain: Wild Salmon, Salt, Pure Cane Brown Sugar and our love for great tasting salmon. We then smoke the salmon using Applewood, as opposed to the more commonly used Alderwoods, this results in a lighter, sweeter tasting product.

Process

To create our outstanding products, we have taken great care to ensure that every step is performed at the highest level of quality. We don’t use brine injectors (to speed the brining process) which impacts the quality of the meat, or add artificial colors or flavors. Instead, our we personally perform each part of the process by hand:  fish is hand filleted, hand portioned, and hand brined.  Brining and smoking are precisely timed and monitored to consistently impart a light, sweet flavor and deep rich red color to each batch, which is then hand packed to ensure quality.

Our custom brine and flavor profile has been developed and refined over 20 years, which, in concert with our fine ingredients, led to the creation of this award-winning product.

Truly Made in the USA

Did you know that some of the seafood you eat may be processed in other countries regardless of a “Made in the USA” mark on the label? As of 2002, “the COOL (Country of Origin Labeling) law contains an express exclusion for an ingredient in a processed food item.  Thus, retail items that meet the definition of a processed food item do not require labeling under the COOL final rule.”  This means that products can be shipped abroad, processed there, returned to the USA and can still be labeled “Made in the USA”.  At C & H Classic Smoked Fish, we guarantee that all of our products are procured and processed from start to finish right here, in the USA.
